Fried Crappie

1    pound Crappie fillets

1    cup dry pancake mix

      Olive Oil

      Salt and fresh ground pepper

      Vegetable oil for frying

 

For deep frying, fill pan with 4 to 5 inches of oil.  Preheat oil to 370-degrees.  Rinse fillet under cold running water.  Pat dry with paper towels.  Brush with olive oil.  Sprinkle lightly with salt and pepper.  Coat lightly with pancake mix.  Fry in deep fat for 4 to 5 minutes or until fish flakes easily.

Yield:  2-3 servings.
