Frittatas
What is the difference between an omelet and
a frittata? Omelets traditionally have
the egg mixture cooked and folded around a filling, while a frittata just mixes
it all up, cooked in a combination all at once. Frittatas are often served at room
temperature, making them perfect for brunches or larger groups. They can be prepared with almost any
vegetables, cheeses, and/or meats. It is
quick to make and great for leftovers.
Always leave the kitchen spotless clean.
Recipe
2 tablespoons melted unsalted butter
6 ounces deli sliced ham
(1/2-ounce per cup)
6 ounces shredded Sharp
Cheddar cheese (1 tablespoon per cup)
8 large eggs, whisked and divided
Fresh ground pepper
Preheat
oven to 375-degrees. Prepare 12-cup
muffin tin. Brush cups with melted
butter. Using kitchen scissors to cut ham
in small pieces and divide between the muffin cups. Add a tablespoon of cheese to each cup. Whisk
the eggs in a large measuring cup and season with a few grinds of pepper. Pour eggs equally between cups. Bake until golden brown and set, about 12
minutes. Remove and serve.
Yield: 6 servings of 2.
