3/4 cup all-purpose flour
1/2 cup whole wheat flour
1 cup old-fashioned rolled oats
1/2 cup light brown sugar
1/2 teaspoon baking soda
1 cup natural sweetened applesauce
1 large egg
1/2 teaspoon vanilla extract
2 tablespoons ground flax seeds
1 cup dried peaches, apricots or
cranberries, finely chopped
Preheat oven to
350-degrees. In a large mixing bowl,
combine flours, oats, brown sugar, baking soda, applesauce, egg, and
vanilla. Stir in flax seeds and dried
fruit. Pour into an 8-inch round baking
pan coated with a spray of Canola oil.
Bake for 25 to 30 minutes or until a toothpick inserted in center comes
out clean.
Yield: 8 servings.
