Great Pumpkin Quesadillas

 

Holiday/Special Occasions

2  cups shredded Cheddar cheese

½  cup butter

2   large eggs

½  teaspoon garlic salt

¼  teaspoon fresh ground pepper

6   6-inch flour tortillas

     Paprika

2   3-inch celery stalks/leaves

 

In a food processor, blend butter and cheese.  Add the eggs, garlic salt and pepper.  Process until creamy.  Spread ½ cupful on each tortilla.  Stack three tortillas with cheese side up for each quesadilla.  Lightly sprinkle with paprika.  Place on a baking sheet lightly coated with cooking spray.  Bake for 10 to 12 minutes or until golden and bubbly.  Serve on a large platter and place large 3-inch celery stalk/with leaves at top of quesadillas resembling a stem.

Yield:  2 to 4 servings.
