Green Eggs & Ham

 

Holiday/Special Occasions

 

2   ham slices, cut in half   

4   large eggs

2   tablespoons butter, divided

2   tablespoons milk

¼  teaspoon salt

¼  teaspoon fresh ground pepper

1   drop green food coloring

 

Over low heat, melt 1 tablespoon butter in a skillet. Add ham slices, slightly brown and heat through.  Remove from skillet and place on a warmed serving platter.  Cover with aluminum foil.  In a mixing bowl, whisk together the eggs, milk, food coloring, salt and pepper.  Over low heat, melt remaining tablespoon of butter.  Add egg mixture and constantly move with a turner until eggs are firm, yet moist.   Place green eggs on platter with ham.  Serve with toast or English muffin spread with green tinted butter.   

Yield:  4 servings.
