Green Eggs with Ham

On St. Patrick’s Day, prepare a colorful breakfast of Green Eggs and Ham.  Decorations add color and excitement.  Party ware sets of matching tablecloths, plates, cups and napkins convey the holiday theme.  Be careful when tinting the egg mixture – 1 drop is enough!  For scrambled eggs, the cooking temperature should be kept low.  The cooking time should be no longer than is needed to give the degree of doneness desired.

 

Preparation time:  About 15 minutes. 

 

Equipment you’ll need:   Nonstick skillet, kitchen shears, mixing bowl, wire whisk, liquid measuring cup, measuring spoons, table knife, turner, serving platter, fork and spoon.

 

Safety:   Return dairy products to the refrigerator immediately after use.  Ask for adult supervision when cooking ham and eggs. 

 

Recipe:

2    1/4-inch slices of honey ham, cut in half  

4    large eggs

2    tablespoons unsalted butter, divided

2    tablespoons milk

1    drop green food coloring

      Kosher salt and fresh ground pepper to taste

 

1.  Over medium-low heat, melt 1 tablespoon butter in a skillet.

2.  Add ham slices, slightly brown and heat through.  Place on serving platter and  

     cover with foil. 

3.  In a mixing bowl, whisk together the eggs, milk, food coloring, salt and pepper.

4.  Over medium-low heat, melt remaining tablespoon butter in same

     skillet.

5.  Pour egg mixture in. Cook slowly, lifting eggs from bottom and sides of skillet

     with a turner as mixture begins to thicken.   Cook until firm, yet moist. 

6.  Place eggs on platter with ham.  Serve immediately. 

     Yield:  4 servings.

 

Clean up:  Rinse off pan and dishes before eggs set.  Clean up as you go and everyone will appreciate a clean kitchen.
