Herb Broccoli Casserole

 

Holiday/Special Occasions

 

1   10-ounce package frozen chopped broccoli, thawed, drained and patted dry

2   cups shredded cheddar cheese

1   8-ounce package herb stuffing mix

1   small sweet yellow onion, chopped

1   large egg, beaten

½  teaspoon fresh ground pepper

1   cup milk

1   cup chicken broth

 

Preheat oven to 350-degrees.  In a large bowl, combine the broccoli, cheese, stuffing mix, onion, egg and seasoning.  Gradually stir in the milk and broth.  Transfer to a 2-quart baking dish coated with cooking spray.  Bake uncovered for 50 minutes of until a knife inserted near the center comes out clean. 

Yield:  6 servings.
