Holiday Sweet Potatoes – Mary Whiteside – AZ

“A sweet, nutty, and healthy way with sweet potatoes.  People who never like sweet potatoes will love these.  When I make for home I make at least a double recipe.  For potlucks of a dozen or more, I actually double the double. 

 

4     cups mashed sweet potatoes

1/2  stick butter

1     egg

1/2  brown sugar

1/2  teaspoon vanilla

1/2  teaspoon maple flavoring

1/2  can Milnot or evaporated milk

 

Topping

2     cups cornflakes-crushed

1/2  stick butter

1/2  cup brown sugar

3/4  cups pecan bits

 

Mix first 7 ingredients thoroughly.  Pour in casserole or glass 8 x 8- inch cake pan.  Do not cover.  Bake at 350-degrees for 15 minutes.  Mix topping well, spread on top of potatoes, put back in 400-degree oven for 20 minutes.  Serve hot, warm, or cold.  Freezes well.
