1 1/2 cups old-fashioned rolled oats
1 cup dried apricots, finely chopped *
1/2 cup honey
1/4 cup non-fat plain yogurt
2 large egg whiles
1 tablespoon wheat germ
1 tablespoon fat-free milk
2 tablespoons all-purpose flour
2 tablespoons light margarine or yogurt
spread
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
*Dried peaches or golden raisins can be
substituted for apricots.
Preheat oven to
325-degrees. Coat a 9-inch square baking
pan with a spray of Canola oil. In a
large bowl combine all ingredients and mix.
Spoon mixture into prepared pan and smooth.
Bake until center is firm and edges are lightly browned, about 30 to 35
minutes. Cool on wire rack and cut into
squares.
Yield: 8 servings.
