Hot ‘N Spicy Corn Dip

     To celebrate New Year’s Day, serve your family a hot bubbly corn dip.  Corn is mixed with diced tomatoes, two types of cheese, and seasoned with chili powder.  Serve with whole grain crackers.  For a bit of more heat, add a tablespoon of chopped jalapeños.   Always leave the kitchen spotless clean. 

 

 

Recipe: 

2     cups frozen corn, thawed and drained

1     8-ounce package cream cheese, softened

4     ounces Four Cheese Mexican Style cheese

1     14-5 ounce can diced tomatoes with onions and garlic, drained

1      tablespoon chili powder, or less

        Whole grain snack crackers

 

Preheat oven to 350-degrees.  In a mixing bowl, stir together the corn, cream chese, Mexican Style cheese,  diced tomatoes, and chili powder.  Spread into a 9-inch pie plate that has been lightly coated with a spray of canola oil.  Bake 20 minutes or until light golden brown and bubbly.  Serve hot with crackers.  Yield:  3 cups dip.
