1 cup cornmeal
¼ cup all-purpose
flour
2 teaspoon
granulated sugar
1 teaspoon
baking powder
¼ teaspoon baking
soda
1 large egg,
beaten
½ cup buttermilk
2 teaspoons
prepared horseradish
Vegetable
cooking oil
Preheat cooking oil to 375-degrees. Sift together the cornmeal, flour, baking
powder and baking soda into a bowl. In
another bowl, stir together the egg, buttermilk and horseradish. Add liquid ingredients to dry ingredients
and stir just till moistened. Drop
batter by tablespoons into deep hot oil.
Fry 3 minutes or until light golden brown, turning once. Drain on paper towels. Serve hot!
Yield: 14 to 16
