Light Salmon Patties – Pat Boe
1 7.1-ounce pouch
premium skinless & boneless pink salmon
1 egg
¼ cup minced
celery
2 tablespoons
shredded onions
2 tablespoons
light mayonnaise
1 tablespoon
lemon juice
1 cup seasoned
bread crumbs
2 tablespoons
vegetable oil
Bread crumbs
to dredge
In a bowl, flake salmon with a fork. Mix in egg, celery, onions, mayonnaise, lemon
juice and bread crumbs. Form into 4
patties and roll in bread crumbs. In a
skillet, heat oil over medium heat. Fry
patties on both sides until golden brown.
Yield: 4 patties.
