Mallow Popcorn Balls

     Trick or Treat!  Greet the little goblins in your neighborhood with a treat of marshmallow popcorn balls.   Fresh popped popcorn is stirred into a creamy marshmallow mixture.  For a special treat, a cup of M&M candies can be stirred in.    To prepare balls, let the mixture cool as to not burn your hands.  Wrap individually in plastic wrap and tie with a pretty orange, black, and/or purple ribbon.  Always clean the kitchen after you cook.   

 

Recipe:

1/4   cup unsalted butter

4      cups jet puffed miniature marshmallows, about 1/2 pound  

1      teaspoon pure vanilla extract

12    cups popped unsalted popcorn, about 1/3 cup

 

Pop popcorn according to package directions.   Pour into a large bowl.  Set aside.   Melt butter in a saucepan over low heat.  Stir in marshmallows and vanilla.  Stirring constantly, cook until marshmallows are completely melted and mixture is well blended.  Pour marshmallow mixture over popcorn.  Stir to coat.  Shape into eight (3-inch) balls with lightly greased hands.  Place on shallow baking pan lined with wax paper.  Let stand until firm.  Store in an airtight container at room temperature. Yield:  8 servings.
