Marinated Cucumbers

 

Farmer’s Market

 

2   medium cucumbers, partially peeled vertically and sliced

1   small sweet yellow onion, thinly sliced

 

Marinade

½  cup water

¼  cup cider vinegar

2   tablespoons granulated sugar

2   tablespoons olive oil

1   teaspoon dried basil

1   teaspoon celery seed

1   teaspoon coriander seed

1   small sweet yellow onion, thinly sliced

     Salt and fresh ground pepper to taste

 

In a bowl, whisk together water, vinegar, sugar, olive oil, basil, coriander seeds and celery seeds.  In a large shallow dish, place sliced cucumbers and onions.  Pour marinade over and spoon to coat.  Cover and refrigerate for 12 to 24 hours.  Spoon  marinade over just before serving.

Yield:  6 servings.
