Meat Loaf

1    pound lean ground beef

1    cup quick cooking whole grain oatmeal  

3    tablespoons chopped sweet yellow onion

1/2 teaspoon salt

1/2 teaspoon fresh ground pepper

2    teaspoons Italian seasoning, optional

2    teaspoons sugar or honey

1/2 cup V-8 or tomato juice

1    large egg, beaten

2    teaspoons Worcestershire sauce

 

Preheat oven to 350-degrees.  Put all ingredients in mixing bowl and mix thoroughly.  Place in an ungreased 9 x 5 x 3-inch loaf pan and pack down tightly.   Bake for about 1 hour.  Pour off any fat that may be around meat loaf in pan.  Let stand on a cooling rack for at least 15 minutes.  Remove from pan and slice. 

Yield:  8 servings.
