Milk Gravy

Standard

Gravy should have a glossy appearance and a smooth texture throughout.  There should be a pleasing flavor with no suggestion of a raw starch taste.

 

Recipe -

2     tablespoons butter

2     tablespoons all-purpose flour

1     cup milk

1/4  teaspoon kosher salt

1/4  teaspoon fresh ground pepper

 

Directions –

Melt butter in a saucepan over low heat.  Remove from heat.  Add in flour, salt and pepper and whisk until smooth.    Add milk slowly to make a smooth paste and then whisk in rest of the milk.  Return to heat and cook whisking constantly, until sauce has boiled gently for 30 seconds.  Hold sauce by covering saucepan or stirring constantly. 

 

Presentation

Serve in a warm gravy boat over biscuits, country fried steak, mashed potatoes, etc.
