Mint Cheesecake
1 can sweetened
condensed milk, divided
1 6-ounce package
milk chocolate morsels, divided
1 packaged
chocolate-flavored crumb pie crust
4 3-ounce
packages cream cheese, softened
½ teaspoon mint extract
1 large egg
2 drops green
food color, more or less
Preheat oven to 350-degrees. In a saucepan over low heat, melt ½ cup
morsels with ½ cup of condensed milk and stir to mix. Spread evenly over bottom of pie crust. Using an electric mixer,
beat cream cheese until smooth. Beat
in egg, food coloring, mint extract, and remaining condensed milk. Place pie crust on a baking sheet. Pour cream cheese mixture over chocolate
layer in pie crust. Bake 25 to 30
minutes or until center is set. Set on a
wire rack to cool. Cover and refrigerate
for at least 4 hours.
Yield: 6
servings.
