Night Cookies
“Do Not Peek Cookies!” Egg
whites are beaten stiff and sweetened with sugar. Mini chocolate chips and chopped pecans are
folded in. Cookies are baked for at
least 8 hours in a preheated oven that is immediately turned off. Ask for adult supervision when using the electric
mixer. Serve cookies with a cup of hot cocoa. Always leave the kitchen clean.
Recipe:
2 large
egg whites, at room temperature
1/3 cup granulated sugar
2/3 cup mini semi-sweet chocolate
chips
1/4 cup finely chopped pecans
Preheat oven to 350-degrees.
Beat egg whites until stiff.
Gradually add sugar a tablespoon at a time. Gently fold in chocolate chips and nuts. Drop by heaping teaspoonful onto a foil
covered cookie sheet. Place cookies on
center rack in the oven and turn off heat.
Do not open oven door for at least 10 hours or overnight.
Yield: 1 1/2 dozen.
