Nighty Night Cookies

     “Do Not Peek Cookies!”   Egg whites are beaten stiff and sweetened with sugar.  Mini chocolate chips and chopped pecans are folded in.  Cookies are baked for at least 8 hours in a preheated oven that is immediately turned off.  Ask for adult supervision when using the electric mixer.   Serve cookies with a cup of hot cocoa.  Always leave the kitchen clean. 

 

Recipe:

2      large egg whites, at room temperature

1/3   cup granulated sugar

2/3   cup mini semi-sweet chocolate chips

1/4   cup finely chopped pecans  

 

Preheat oven to 350-degrees.  Beat egg whites until stiff.  Gradually add sugar a tablespoon at a time.  Gently fold in chocolate chips and nuts.  Drop by heaping teaspoonful onto a foil covered cookie sheet.  Place cookies on center rack in the oven and turn off heat.  Do not open oven door for at least 10 hours or overnight. 

Yield:  1 1/2 dozen.
