No-bake Cheesecake

 

Sarah’s “Lite” Recipes

 

2     3- ounce boxes any flavor gelatin

1     cup boiling water

1     8-ounce package light cream cheese, softened

1/2  cup light sour cream

1     8-ounce carton light whipped topping

1     9-inch deep dish graham cracker crust (optional)

 

Dissolve gelatin in boiling water and stir constantly for 3 minutes.   Beat together cream cheese and sour cream in a large bowl until smooth and fluffy.   Gradually stir in dissolved gelatin.  Fold in

whipped topping.  Spoon into a deep-dish pie plate coated with a light spray of Canola oil or a graham cracker crust.  Chill until firm. 

Yield:  6 servings.
