Oatmeal Bread

 

Country Cooking

 

½    cup butter, softened

¼    cup honey

2     large eggs

3     small bananas, mashed

½    cup buttermilk

1     teaspoon vanilla extract

1     teaspoon baking powder

¼    teaspoon baking soda

¼    teaspoon salt

1    cup old-fashioned rolled oats

1    cup whole-wheat flour

½   cup all-purpose flour

1    cup pecans, chopped

 

Preheat oven to 350-degrees.  Cream together butter and honey in a mixing bowl.  Beat in eggs one at a time.  Stir in mashed bananas, buttermilk and vanilla.  In another bowl stir together all the dry ingredients including:  baking powder, baking soda, salt, oats and both flours. Spoon the dry ingredients into the creamed ingredients and mix.  Fold in nuts.  Pour into a 9 x 5 x 3-inch loaf pan coated with cooking spray.  Bake for about 55 minutes or until a toothpick inserted in the center comes out clean.  Cool on wire rack. 

Yield:  8 to 10 slices.
