Oatmeal Cookies

 

Country Cooking

 

1    cup all-purpose flour

½   teaspoon baking soda

1    teaspoon baking powder

¼   teaspoon salt

½   teaspoon ground cinnamon

2    sticks unsalted butter (1 cup) 

¾   cup granulated sugar

¾   cup light brown sugar, firmly packed

2    medium eggs

2    teaspoons vanilla

3    cups uncooked quick cooking oats

1    cup raisins

 

Preheat oven to 350-degrees.  Sift together flour, baking powder, baking soda, cinnamon and salt onto wax paper.  Using an electric mixer, cream butter and sugars until smooth.  Beat in eggs and vanilla.  Mix dry ingredients into creamed ingredients.  Stir in oats and raisins.  Drop by spoonfuls onto a cookie sheet lined with parchment paper.  Bake 10 to 12 minutes.  Remove cookies immediately from cookie sheet and cool on a wire rack.
