Oatmeal Muffins

 

Country Cooking

 

1    cup old-fashioned oatmeal

1    cup all-purpose flour

½   cup light brown sugar

1    teaspoon baking powder

¾   cup buttermilk*

1    large egg, slightly beaten

3    tablespoon vegetable oil

½   teaspoon cinnamon

 1   cup dried fruit, peaches, cherries, apricots or raisins   

      Granulated sugar

 

Preheat oven to 400-degrees.  In a large bowl, mix together oats, flour, brown sugar, baking powder and cinnamon.  In another bowl, whisk together buttermilk, egg and oil.  Fold in dried fruit.  Coat muffin cups with cooking spray.  Fill the muffin cups two-thirds full.  Sprinkle lightly with granulated sugar.  Bake for 15 minutes

or until a toothpick inserted in center of muffin comes out clean. 

Yield:  12 muffins.        

 

* Sour milk can be substituted for buttermilk.  For ¾ cup milk, add 2 teaspoons vinegar.  Let stand 15 minutes.
