Onion Rings
2 medium Vidalia
or sweet yellow onions, sliced into rings
¾
cup all-purpose flour
1 cup milk
1 large egg
1 tablespoon
vegetable oil
¼
teaspoon salt
Oil for deep-frying
In a bowl, combine flour, milk, eggs, oil, and salt. Beat
until smooth. In a large skillet, heat
2-inches of oil to
375-degrees. Separate onions into rings. Using tongs or a fork dip onion rings into
batter. Fry onion rings in a single layer for 2 to 3 minutes or till golden
brown. Remove and drain on paper towels.
Yield: 4 servings.
