Onion Salad

 

Farmer’s Market

 

1   sweet yellow onion, thinly sliced in rings (about 1 ½ cups)

2   cucumbers, partially peeled and sliced (about 3 cups)

1   carrot, grated (about ½ cup)

 

Dressing

½  cup white vinegar

¼  cup granulated sugar

1  teaspoons dill weed

½  teaspoon salt

½  teaspoon fresh ground pepper

    

In a chilled salad bowl, gently mix the cucumbers, onions and carrots.  In a small bowl, whisk together the dressing ingredients.  Pour over the cucumber mixture and toss to coat.  Serve immediately or cover and refrigerate until ready to serve.
