Orange Pancakes
7 tablespoons
granulated sugar, divided
2 teaspoons
cornstarch
1 ½ cups orange juice
1 cups
all-purpose baking mix
2 large eggs
¾ cup milk
In a saucepan combine 4 tablespoons sugar, cornstarch and
¾-cup orange juice. Stir until smooth.
Bring to a boil, reduce heat and stir until slightly thickened. Remove from heat and cool to lukewarm.
Combine biscuit mix and remaining sugar in a bowl. Mix in eggs, milk and remaining ¾ cup orange juice.
Pour batter by ¼ cupfuls onto a griddle coated with
cooking spray. When bubbles form on top
of pancakes, turn. Serve with orange
sauce.
Yield: 8 pancakes.
