Oven Fried Tilapia
1 pound Tilapia
fillets
¼ cup all-purpose
flour
½ teaspoon salt
½ teaspoon fresh
ground pepper
2 medium eggs
¼ cup seasoned bread
crumbs
¼ cup yellow
cornmeal
1 teaspoon dried
marjoram
1 teaspoon dried
thyme
Preheat oven to 400-degrees. Cut fillets into 4 serving pieces. Soak for a few minutes in ice water. Discard liquid, rinse under cold running
water and pat dry with paper towels.
In a shallow pan, combine flour, salt and pepper. In another shallow pan, beat eggs until
frothy. In a third shallow pan, mix
together the bread crumbs, cornmeal, marjoram, and thyme. Dip fillets into flour mixture, egg mixture
and than bread crumb mixture. Coat a
shallow baking pan with cooking spray.
Place fillets in baking pan. Bake
for 10 to 12 minutes or until fish flakes easily with a fork.
Yield: 4
servings.
