1 small sweet yellow
onion, chopped (1/2 cup)
3 tablespoons
butter
½
cup water
¼ cup fresh Oregano leaves
2 cloves garlic,
minced
Salt and fresh ground pepper.
Fresh pasta,
cooked
Parmesan
cheese
Sauté onion and garlic in butter. Add tomatoes, water and oregano. Simmer for 30 minutes till reduced. Season to taste. Serve over linguine, spaghetti or your
favorite pasta. Sprinkle with Parmesan cheese.

Harvest and preparation – For fresh use, harvest before flowering. Cut early in the morning, just after the dew
has evaporated and before the sun is hot.
Place stems in a colander and rinse under cold running water. Pat dry with paper towels. Remove leaves from tough stems.
