Peanut Butter Crispy Squares

Mix peanut butter, chocolate, and toasted rice together and create a great nutritious snack. Peanut butter is a blend of shelled, roasted, cooked, and then ground peanuts.  It was invented in 1890 by a doctor from St. Louis.  He prescribed this high-protein food as a nutritious supplement for his patients.  Chocolate is a mixture of cocoa, cocoa butter and very fine sugar.  Rice is a cereal grass, which provides the main source of food for half of the world’s population.
 

 Preparation time:  About 10 minutes.

 

Equipment you’ll need:  Nonstick saucepan, wooden spoon, large mixing bowl, nested measuring cups, table knife, serving pan, and plastic wrap.

 

Safety:  Ask for adult supervision when melting chocolate chips, peanut butter and marshmallows. Do not touch hot mixture with your hands while pouring over toasted rice and pressing into serving pan. 

 

Recipe:

1/2  cup semi-sweet chocolate  morsels

1/2  cup creamy peanut butter

1     10-ounce bag jet-puffed miniature marshmallows

6     cups toasted rice cereal

 

1.   Add toasted rice cereal to a large mixing bowl.  Set aside.

2.   Over low heat melt chocolate chips in a saucepan. Stir constantly.

3.   Add peanut butter and continue to stir.

4.   Add marshmallows and continue to sir. 

5.   Carefully pour melted mixture over cereal and mix to coat with wooden spoon.   

6.   Coat a 13 x 9 x 2-inch serving pan with a spray of canola oil. 

7.   Pour mixture into serving pan and firmly compress.

8.   Let cool before cutting into crispy squares. Cover leftovers with plastic wrap. 

      Yield:  12 servings. 

  

Clean up:  For easier cleaning put sticky mixing bowl in hot soapy dishwater immediately after use. Wipe off all counters and clean with anti-bacterial spray.
