Peppermint Divinity

Ho! Ho! Ho! Santa will love a snack of fluffy peppermint divinity.  Fluffy white frosting mix is combined with corn syrup, peppermint flavoring and confectioners’ sugar.  Crushed peppermint candies and nuts are folded in.  A very small amount of red (pink) paste food coloring can be stirred in for a swirl effect or add it with the first few ingredients for a solid color.  For variation, substitute vanilla for peppermint flavoring and leave out the candy and nuts. 

 

Preparation time:   About 15 minutes

 

Equipment you’ll need:  Electric mixer, liquid measuring cup, solid (nested) measuring cups, measuring spoons, tablespoon, cookie sheet, spatula, and serving platter. 

 

Safety:  Ask for adult supervision when using the mixer and adding the boiling water.  Use dry hands to plug and unplug mixer from electric outlet. 

 

Recipe: 

1     7.2-ounce package fluffy white frosting mix 

1/3   cup white corn syrup

1      teaspoon peppermint flavoring

1/2   cup boiling water

1      pound box confectioners’ sugar

2      tablespoons finely crushed peppermint candies

3/4   cup chopped pecans. 

 

l.  Mix together frosting mix, corn syrup, peppermint flavoring, and water.  

2.  Beat with an electric mixer on medium-high speed for about 5 minutes, or until   

     stiff peaks form. 

3.  With the mixer on low speed, gradually add the confectioners’ sugar.

4.  Fold in the crushed candy and chopped nuts. 

5.  Drop a tablespoonful onto a cookie sheet covered with wax paper.  Let stand

     until dry.    Store leftover candy, single layer, in a tightly covered container. 

    Yield:  2 dozen pieces. 

 

Clean up:  Wipe off mixer with a damp cloth.  Cleaning is as important as cooking.
