Pepperoni Calzone

Originating in Naples, a calzone is a stuffed pizza that resembles a large turnover. The fillings can be various meats, vegetables, and/or cheese.  Individual Calzones can be deep-fried or brushed with olive oil and baked.  For a vegetable calzone, substitute chopped or thinly sliced fresh vegetables, such as bell peppers, mushrooms, broccoli and/or onion for the pepperoni.   Cooking is lots of fun, but always remember to clean up kitchen.   

 

Recipe:

2    13.8-ounce cans refrigerated pizza crust

2/3  cup pizza sauce

1     8-ounce package shredded Mozzarella cheese, divided

1     3.5-ounce package sliced pepperoni 

1/3  cup grated Parmesan cheese, divided

       Olive oil

 

Preheat oven to 375-degrees.  Unroll one pizza crust onto a baking sheet coated with a spray of canola oil.  Gently stretch crust to a 10 x 12-inch rectangle.  Spread crust evenly with pizza sauce to within 1-inch of edge of crust.  Sprinkle with half of the Mozzarella cheese.  Layer pepperoni over and then cover with remaining Mozzarella cheese.  Sprinkle over Parmesan cheese, reserving 1 tablespoon.  Top with second pizza crust.  Crimp edge with fork to seal.  Brush with olive oil and sprinkle with reserved Parmesan cheese.  Bake 25 to 30 minutes or until evenly browned.  Let stand 5 minutes before cutting.  Serve with additional heated pizza sauce. 

Yield:  8 servings.
