Pizza Snack Cups

Enjoy a quick pizza snack.  Refrigerated biscuits are molded into small cups.  They are filled with seasoned ground beef, topped with cheese, and baked until golden brown.    Bake in a shiny muffin tin.  Dark surface baking pans cause overbrowning.   Ask an adult to drain the ground beef.  Serve with carrot sticks and a glass of cold milk.  Enjoy cooking but always leave the kitchen clean. 

 

Recipe: 

1     12-ounce can refrigerated biscuits (10)

1/2   pound lean ground beef

3/4   cup pizza sauce

2/3   cup Mozzarella cheese (10 tablespoons) 

 

Preheat oven to 375-degrees.  Separate biscuits.  Press 1 biscuit onto bottom and up side of each of 10 medium muffin cups sprayed with a coat of canola oil.   Refrigerate until needed.  Brown meat in a skillet until juices run clear.  Drain.  Stir in pizza sauce and heat through.   Spoon 2 tablespoons of meat mixture into biscuit cups, pressing filling into cups with back of spoon.  Sprinkle with 1 tablespoon cheese.  Bake for 13-15 minutes until biscuits are light golden brown.  Let stand for 5 minutes.  Gently remove from pan and serve hot.  Yield:  10 snacks.
