Pot O’Gold Butter/Shamrock Biscuits

Pot O’Gold Butter

 

1   stick of butter, slightly softened

     Melon ball utensil

 

Cut out coins (balls) of butter and slightly flatten.  Place about 1-inch apart in a container lined with wax paper.  Cover and freeze until solid.  A few minutes before serving,  place butter coins in a small crock surrounded by green biscuits.  Have fun with this!  Serve with Green Eggs and Ham!

 

Quick Shamrock Biscuits

 

2   cups all-purpose baking mix

¾  cup milk

     Baking Mix

     Few drops of green food color

 

Preheat oven to 425-degrees.  Tint milk light green.  In a bowl, combine ingredients into a soft dough.  Turn onto a pastry board dusted with baking mix.  Mix and need 15 to 20 times.  Roll dough with a floured rolling pin to ½-inch thickness.  Cut with a shamrock cookie cutter.  Place on a baking sheet coated with cooking spray.  Bake for 12 to 15 minutes.   Remove from oven and place on serving platter.  Place chilled crock of Pot O’ Gold butter coins in the center.
