Pumpkin Spice Muffins

Muffins were most popular in England during the 19th century, when Muffin Men roamed the town streets at teatime, ringing their bells.  Sweet and spicy and loaded with pumpkin pie flavor, muffins make a great snack served with a cold glass of milk.  Pumpkin pie spice is a mixture of ground cinnamon, cloves, ginger and nutmeg.  Half a cup of golden raisins and/or chopped pecans can be added for flavor and nutrition.  

 

Preparation time:  About 10 minutes

 

Equipment you’ll need:   Mixing bowl, utility spoon, 12 regular-size muffin pan, solid (nested) measuring cups, measuring spoons and liquid measuring cup. 

 

Safety:  Use dry potholders to place the muffin pan into oven and remove.  Always wash your hands with soap and water before you begin to cook. 

 

Recipe:

2     cups all-purpose baking mix

1     cup 100% pumpkin

1/4  cup sugar

1/4  cup milk

1/4  cup canola oil

1     teaspoon pumpkin pie spice 

1     large egg, beaten

 

1.  Preheat oven to 400-degrees.  Place paper baking cup into each muffin cup.

2.  In a mixing bowl, stir together all ingredients until just moistened.  Fill muffin

     cups about 2/3 full.

3.  Bake 15 to 20 minutes or until a toothpick inserted in center comes out clean. 

4.  Remove from muffin pan.   Serve warm.  

     Yield:  1 dozen. 

 

Clean up:  Turn off the oven immediately after use.  Parents are very proud when you leave a spotless kitchen.
