Raisin
Bread Pudding
Bread pudding is a simple
delicious baked dessert made with cubes or slices of bread. It is saturated with a mixture of milk, eggs,
sugar, vanilla and spices. Chopped fruit
or nuts also can be added. A caramel or
lemon sauce adds a bit more flavor.
Raisins are made from grapes.
They are picked in bunches, dried naturally in the sun for two weeks and
then processed. It takes 4 ˝ pounds of
fresh grapes to make 1 pound of raisins. Raisins are cholesterol-free, low in
sodium and totally fat-free. They
provide iron, potassium, calcium and are rich in antioxidants.
Equipment you’ll
need: Kitchen shears, can opener, 2 bowls, solid
(nested) measuring cups, measuring spoons, wire whisk, cooling rack, 9 x 9 x
2-inches baking pan and serving spoon.
Preparation time: About 15 minutes.
Safety: Use dry potholders to put baking pan into the
oven and to remove. Let cool for a few
minutes before serving.
Recipe:
8 slices bread
1 cup raisins
1 12-ounce can evaporated milk
2 large eggs
1/2 cup packed brown sugar
1 teaspoon vanilla
1 teaspoon ground cinnamon
1. Preheat oven to 350-degrees. Coat a baking pan with cooking spray.
2. Remove crusts from bread and then cut into
cubes.
3. Combine bread cubes and raisins in a large
bowl.
4. Whisk together remaining ingredients in
another bowl.
5. Pour egg mixture over bread mixture and stir
to combine.
6. Pour mixture into baking pan. Let stand for 15 minutes.
7. Bake for 30 minutes or until knife inserted
in center comes out clean.
8. Remove from oven and set on cooling
rack.
Yield:
6 servings.
Clean up: Turn off oven immediately after use. Be a great cook, always leave the kitchen
spotless.
