Red Leaf Lettuce Salad

 

Quick and Easy

 

1    bunch redleaf lettuce, torn into small pieces. 

½   pound mushroom, sliced

1    small sweet yellow onion, sliced

2    hard cooked eggs, sliced

4    strips bacon, fried crisp and crumbled

      Warmed Balsamic Vinaigrette dressing

 

Put lettuce, mushrooms and onions in a chilled salad bowl.  In the microwave, warm ½ cup balsamic vinaigrette for a few seconds.  Pour over salad and toss to coat.  Garnish with bacon and sliced hard cooked eggsR. 

Serve immediately.

Yield:  4 to 6 servings.   

 

Balsamic Vinaigrette

½  cup olive oil

½  cup balsamic vinegar

½  teaspoon dried crushed thyme leaves

½  teaspoon dried basil leaves

¼  teaspoon fresh ground pepper

¼  teaspoon salt

½  teaspoon granulated sugar

 

Combine all ingredients in a shaker or screw-top jar.  Shake! Shake! Shake!  Store in the refrigerator and shake before serving.

Yield:  1 cup.
