Red Velvet Cake

“My favorite cake for Valentine’s Day”

 

1    18.5-ounce box super moist white cake mix

1     3.9-ounce box instant chocolate pudding mix

1     cup milk

3     large eggs

¼    cup Canola oil

1     tablespoon food coloring, more or less

 

Preheat oven to 350-degrees.  Using an electric mixer on medium speed, combine all ingredients and beat for 4 minutes.  Coat a 9 x 13 x 2-inch baking pan with cooking spray and dust lightly with flour.   Bake for 30 minutes or until a toothpick inserted in the center comes out clean.  Crumb and frost!

 

Frosting

1    8-ounce package cream cheese

1    stick butter

1    tablespoon vanilla

1    16-ounce box confectioners’ sugar

 

Using an electric mixer on medium speed, combine all ingredients and beat until smooth.  Frost cake!
