Rice Pudding
Instant
rice, pudding, sour cream, and whipped topping are blended to prepare a creamy dessert
for your family. Instant long grain has
been processed, pre-cooked, and then dehydrated to make it shelf stable. This type of rice, which is enriched by
adding nutrients to the rice kernels, requires a cooking time of only a few
minutes rather than the lengthy time required for uncooked or raw rice. Have fun cooking, but always leave the
kitchen clean.
Recipe:
3/4 cup Instant Enriched Long Grain Rice
3/4 cup water
Prepare 1 1/2 cups rice according to box
directions. Chill.
1 3.4-ounce box French Vanilla instant
and pie filling pudding mix
1 1/2 cups milk
Reduce milk to 1 1/2 cups and prepare
pudding according to box directions.
Chill.
1/2 cup dairy sour cream
1 1/2 cups frozen whipped
topping, thawed
1 11-ounce can
mandarin oranges, drained
In a mixing bowl, whisk
together sour cream and whipped topping.
Stir in chilled pudding and rice.
Spoon into dessert dishes and chill.
Just before serving, top each with a pinwheel of mandarin oranges.
Yield: 6 servings.
