Roasted Garlic
1 bulb garlic
2 teaspoons
olive oil
Preheat oven to 400-degrees. Remove the dry outer skin on the bulb. Leave skin on the outer layer of cloves.
Cut off 1/8-inch of the top portion of each clove. This leaves the individual cloves
exposed. Drizzle olive oil over
saturating the cloves. Place cut side
up in a small baking pan. Cover and
bake for 30 minutes. Cloves should be
soft when pressed. Allow the head to
cool slightly. Using the tip of a small
knife, remove soft paste.
Yield: 1 teaspoon
paste from a medium-size bulb.
