Roasted New Potatoes

 

Farmer’s Market

 

1    pound small “new” potatoes, peeled around center

3    cloves garlic, finely minced

2    tablespoons olive oil

˝   teaspoon salt

˝   teaspoon fresh ground pepper

 

Preheat oven to 350-degrees.  Arrange potatoes in a 9 x 13 x 2-inch baking pan lightly coated with cooking spray.  Drizzle with olive oil and sprinkle garlic, salt and pepper over.  Cover and bake for 30 to 35 minutes or until potatoes are tender.

Yield:  4 servings.
