Shamrock Biscuits/Coins of Butter

 St. Patrick’s Day is associated with everything Irish: anything green and gold, shamrocks and luck.  This year, bake up a fresh platter of Shamrock biscuits served with coins of butter.  They are a nice accompaniment to serve with your dinner of Corned Beef and Cabbage.  Prepare the green biscuit dough by lightly tinting the milk with a paste food color.   A few minutes before serving, place the coins in a small container and surrounded with hot biscuits.

 

Preparation time:  About 20 minutes.

 

Equipment you’ll need:  Melon ball cutter, covered container, mixing bowl, liquid measuring cup, solid (nested) measuring cup, baking sheet, pastry board, table fork, utility spoon, rolling pin, shamrock or round cutter, small crock or custard up, and serving platter. 

 

Safety:  Use dry potholders to put baking sheet into the oven and remove. 

Coins of Butter

1 stick unsalted butter, slightly softened
Melon ball utensil

1.  Cut out coins (balls) of butter and slightly flatten.

2.  Place about 1-inch apart in a container lined with wax paper and freeze.

Biscuits
2     cups all-purpose baking mix
3/4  cup milk

1/2  cup finely shredded Cheddar cheese
        Paste food color

1.  Preheat oven to 425-degrees.

2.  Put a bit of paste food color on tip of toothpick to tint milk.  

3  .In a bowl, combine all ingredients into a soft dough.

4. Turn onto a pastry board dusted with baking mix and knead 10 times.

5. Pat or roll dough 1/2-inch thick.  Cut with floured 2-in cutter.

6.  Place on a baking sheet coated with a spray of canola oil. Bake 12-14 minutes. 

7.  Serve on platter with coins of butter. 

     Yield:  8-10 biscuits.  

 

Clean up:  Turn off oven immediately after use.  Parents appreciate a clean kitchen.
