Shamrock Sugar Cookies
1 cup granulated white sugar
1 cup butter,
softened
1 3-ounce
package cream cheese, softened
1 teaspoon
vanilla extract
1 large egg
2 ¼ cups all-purpose flour, more or less
1 teaspoon
baking powder
Green paste food
coloring
Green
colored sugar
Preheat oven to 350-degrees. Using an electric mixer, combine the sugar, butter, cream cheese, vanilla extract and egg. Blend in a small amount of green food paste. In a smaller bowl, mix together the flour and baking powder. Stir dry ingredients into wet ingredients until well blended. Divide dough into thirds and flatten like a pancake. Wrap in plastic wrap and refrigerate for at least 8 hours or overnight. For easier cutting, chill the rolling board, rolling pin and cutters for several hours. On a lightly floured rolling board, sprinkle green sugar crystals lightly over dough and roll to a 1/8-inch thickness. Cut into “Shamrock” shapes with a lightly floured cookie cutter. Place 1-inch apart on a nonstick cookie sheet. Bake for 8 to 10 minutes or until light golden brown. Cool on a wire rack.
Yield: 2 dozen
cookies.
