Soy Wheat Muffins

 

Country Cooking

 

½    cup soy flour

¾    cup whole-wheat flour

¾    cup all-purpose flour

½    teaspoon salt

2     tablespoons sugar

1     large egg, beaten

2     tablespoons butter, melted

1     cup milk

 

Preheat oven to 400-degrees.  Mix dry ingredients.  Add remaining ingredients all at once, stirring only enough to moisten dry ingredients.  Coat muffin pan cups with cooking spray.  Fill cups half full with batter.  Bake for

12 to 15 minutes or until a toothpick inserted in center comes out clean.

Yield:  12 muffins.
