1 ½ quarts strawberrie, hulled, sliced and divided
1 cup
granulated sugar
2 tablespoons
cornstarch
2 cups water
1 3 ounce
package cream cheese, softened
1 9-inch
ready-to-fill pie crust
Bake pie crust as directed on package. Mash enough
berries to measure 1 cup. In a small
bowl, whisk together sugar and cornstarch.
Add sugar mixture, mashed berries to water. Bring to a boil and whisk
constantly until mixture thickens. Remove from heat and let cool for 10
minutes. Gently fold berries into
thickened sauce. Beat cream cheese until
smooth; spread onto bottom of baked pie shell. Fill shell with remaining berries. Pour berry glaze over top of pie. Chill at
least 3 hours or until set. Garnish with
whipped topping and whole berries.
Yield: 6 servings.
