Stuffed Celery Sticks

 

Farmer’s Market

 

6    medium stalks celery

3    ounces cream cheese, softened

½   cup finely chopped smoked ham

1    2-ounce jar pimentos, drained and chopped fine

¼   cup mayonnaise

½   teaspoon prepared mustard

¼   teaspoon garlic powder

¼   teaspoon fresh ground pepper

 

Cut celery into 3-inch pieces.  Mix ingredients together and spread about 1 tablespoon in each piece of celery.  Cover and refrigerate for about 1 hour. 

Yield:  about 18 appetizers.
