Stuffed French Toast

      French toast is a breakfast dish made by dipping bread in a milk-egg mixture, then frying it until golden brown on both sides.  In England, French toast is called “poor knights of Windsor.”  Prepare your family a “Stuffed” version by sandwiching peanut butter, preserves/jelly, and banana slices between two slices of whole grain bread.   Always clean up as you cook.   

 

 

 

Recipe:  

4      slices whole grain bread

4      tablespoons creamy peanut butter, divided

4      tablespoons preserves or jelly, any flavor, divided

1      small banana

1      large egg

1/4   cup milk

2      tablespoons unsalted butter

        Honey

 

Spread peanut butter over 2 slices of bread.  Cut banana in 12 thin slices and cover peanut butter with 6 each.   Spread preserves over remaining bread.   Press slices together to form two sandwiches.  Whisk together egg and milk in a shallow bowl.  Dip sandwiches in egg mixture to coat.  Cook in butter over medium-high heat, about 2 minutes on each side until golden brown.  Cut each sandwich diagonally.  Serve warm with a drizzle of honey. Yield:  2 servings.
