Stuffed Tomatoes

Blossoms, Cups or Fantans!  To prepare a Blossom , turn tomato stem end down.  Cut down to but not through bottom in 6 wedges.  Scoop out some of the center.   To prepare a Cup, cut a thin slice off bottom of tomato to level.  Cut slice off top of tomato.  Scoop out center.  To prepare a Fantan, turn tomato stem end down.  Cut down to but not through bottom, making 3 - 4 slices.  For all, invert after cutting on a paper towel.  Just before serving, season interior with salt and fresh ground pepper and then stuff.  Cottage cheese, chicken and tuna salad also make great stuffings. 

 

Preparation time:  About 20 minutes.

 

Equipment you’ll need:  cutting board, knife (adult), teaspoon, scoop, solid (nested) measuring cups, measuring spoons, and 4 serving plates.  

 

Recipe

4    1/2  pound red tomatoes

      Kosher salt and fresh ground pepper

 

Turn tomato stem end down.  Cut down to but not through bottom in 6 wedges.  Scoop out some of the center.  Invert on paper towel and chill.  Just before serving, season interior and stuff. 

 

Turkey Salad

8       ounces cooked turkey breast tenderloins (2cups)

1       large rib celery, finely chopped (1/2 cup)

1/2    cup thin sliced water chestnuts

1/2    cup Chow Mein Noodles

Dressing

1/2    cup mayonnaise

2       teaspoons stir-fry seasoning mix (from package)   

1       teaspoon Teriyaki sauce

         Kosher salt and fresh ground pepper

 

1.  Cut cooked tenderloins into small bite size pieces and place in a mixing bowl. 

2.  Add celery and water chestnuts.   Stir to mix.  

3.  In a small bowl, whisk together dressing ingredients.  Spoon over turkey mixture 

     and toss to coat. 

4.  Cover and refrigerate for least 1 hour.

5.  Just before serving stir in Chow Mein Noodles

6.  Stuff tomatoes and place on a crisp leaf of red tip lettuce.

7.  Sprinkle lightly with kosher salt and fresh ground pepper.

     Yield:  4 servings.

 

Clean up:  Always clean off the counters with an anti-bacterial spray.  Show initiative.  Do a little extra when you clean the kitchen.
