Summer Squash Stir-fry

 

Sarah’s “Lite” Recipes

2   small yellow squash, diagonally cut into 1/4 -inch slices

2   small zucchini. diagonally cut into 1/4 -inch slices

1   red bell pepper, julienne

2   cloves garlic, minced

3   tablespoons olive oil

     Salt and fresh ground pepper to taste

 

Preheat olive oil in skillet over medium-high heat and sauté garlic.    Add peppers, squash and zucchini.  Stir-fry about 5 minutes or until crisp tender.  Season to taste. 

Yield:  4 servings.
