Sweet Cornbread

 

Holiday/Special Occasions

1   cup all-purpose flour

1   cup yellow cornmeal

½  cup granulated sugar

½  teaspoon salt

1   tablespoon baking powder

1   large egg

1   cup milk

¼  cup vegetable oil

 

Preheat oven to 400-degrees.  Coat a 9 x 9 x 2-inch square baking pan with cooking spray.  In a large bowl, sift or stir together flour, cornmeal, sugar, salt and baking powder.  In another bowl, stir together the egg, milk and oil.  Add the liquid ingredients to the dry ingredients just until mixed.  Pour batter into pan and tap to settle.  Bake for 20 to 25 minutes or until a toothpick inserted in center comes out clean. 

Yield:  6 servings.
