Sweet Pepper Salad

 

Farmer’s Market

 

1   green bell pepper, julienne

1   red bell pepper, julienne

1   yellow bell pepper, julienne

1   small sweet yellow onion, thinly sliced into divided rings

     Salt and fresh ground pepper

     Sweet vinegar and olive oil dressing

 

Combine peppers and onion rings in a chilled salad bowl.  Drizzle with dressing and toss to coat.  Cover with plastic wrap and refrigerate about two hours.  Season to taste just before serving.

Yield:  4 servings.
