Sweet Potato Mallow

 

Farmer’s Market

 

1   pound sweet potatoes (about 3 medium)

˝  cup dairy sour cream

˝  teaspoon salt

˝  teaspoon fresh ground pepper

2   large egg yolks

1   cup crushed pineapple, drained

1   cup miniature marshmallows

 

Preheat oven to 350-degrees.  Wash sweet potatoes, but do not peel.  Boil until tender, about 30 minutes.  Drain.  Skins will slip off easily.  Coarsely mash sweet potatoes.  Using an electric mixer on medium speed, mix in sour cream, salt, pepper, and egg yolks.  Stir in crushed pineapple.  Pour into a 9 x 9 x 2-inch baking pan coated with cooking spray.  Top with marshmallows.  Bake uncovered until marshmallows are puffed and golden brown, about 30 minutes. 

Yield:  4 servings.
